Seafood Ramen

I had a heavy lunch earlier today and was full even when i got home just now. So i decided to cook some ramen. Been craving for ramen lately. However, didn't feel like having kimchi ramen, so i change the soup base to chicken stock.


My mum cook some homemade fishball soup so i used most of the ingredients. I boiled about 2 cups of water, add a cube of chicken stock, bring the broth to boil and i add some prawns and the ramen, and when its almost cooked, i break an egg and let it cook for about a min before turning off the heat and top off the dish with some fishball and fish roe. The ramen was springy right up to the last slurp. Just a simple ramen dish on rainy days... yum yum...

Squid Ink Udon

I've been craving for squid ink udon lately and only managed to get around to cook it today. Squid ink udon may not be to anyone's liking mainly cos of its unappealing appearance and its unfamiliar taste.

I know that it looks like "errrr" but it taste absolutely delicious. Not to self-praise myself here but the distinctive aroma of the squid ink bubbling as you cook it, is mouth-watering. This is one of my favorite dish as well. its quite easy to cook this.

Preparation time : 10-15mins

Cooking time : 20-25mins

(serves 2)


Ingredients :

3-4 tbsp of blended chilli (blend dried chilli and onion)

10 medium size prawn (shelled)

2 sausages (sliced thinly)

1/2 green capsicum (diced)

10-12 small sized squid heads

2 tsp chicken seasoning (i'm using this for seasoning instead of salt)

2 tbsp of sweet soya bean sauce

1/2 a cup of water

2 packets of plain udon

3-4 tbsp of cooking oil


Instructions :

1. Heat up a frying pan with 3-4 tbsp of cooking oil.

2. Add about 3-4 tbsp of chilli (you may add more if you prefer it spicy)

3. Stir it constantly and add about 2 tsp of chicken seasoning to taste.

4. Continue to stir-fry the chilli for about 5-7 mins.

5. Add prawns, sausages and capsicum and let them cook for about 5-6mins.

6. Add the squid head and stir them. You can see the ink oozing out by now and it then look "thick".

7. Add 2 packets of udon, breaking them apart slightly.

8. Add about 1/2 a cup of water to the pan and stir them.

9. Stirring the udon constantly, add about 2 tbsp of sweet soya bean sauce.

10. Let it boil for about 10mins or more until the udon turns soft and is cooked thoroughly.

11. Serve hot.

Maggie Goreng

Maggie is one of my favourite food. On days that my mom don't cook dinner, i'll cook maggie. I love maggie. They're pretty much versatile. I can cook it plain and soupy or dry with sausages and eggs! So every month, we'll always stock up on Maggie. We'll usually get Chicken and Curry and other brand's mee goreng or mee poh dry.

One of my favourite variety of maggie would be Maggie Goreng. I ate this before at an Indian stall and i loved it. So my sis sort of came up with this recipe. Its pretty simple actually.




Preparation time : 10mins
Cooking time :15-20mins


Ingredients :

1 packet of Maggie (Curry Flavour)
2 cups of water
A few pieces of dried chilli
1 medium onion (pealed and cut into 4)
2 tbsp of cooking oil
1 small piece of chicken thigh (sliced thinly)
1 small piece of squid (sliced thinly)
5 medium sized prawn (shelled)
1 egg

Instructions :

1. Boil 2 cups of water in a pot
2. Add 1 packet of maggie, drain once it cook
3. Blend the dried chilli with onion
4. In a pan, heat up about 2 tbsp of cooking oil
5. Add 2 tbsp of blended chilli ( you can add more if you want it spicy)
6. Stir-fry the chilli for about 3mins
7. Add chicken, squid and prawn and stir-fry it for about 10mins
8. Add an egg and stir the mixture until it become "clumpy"
9. Add the drained noodles and mix them together
10. Add only half a packet of the maggie seasoning.
11. Mix together and serve hot.

Tada... and you're done. So go ahead and try this out and tell me what you think about this dish.
